I remember that iPhone X featured a dual-cell battery design. I see that the iPhone 16 Pro & Pro Max features a L-shaped battery, while the vanilla and Plus model is a rectangle design. But I don't see any analysis mentioning whether it is still dual-cell inside?

Nope they are not. Dual cell is just a temporary solution for when they have no confidence in L cells.
By the way they have done the analysis, you can check xray photos.
