Has anyone found an M2 that fits inside the x series x (internal hard drive) and if so has anyone been able to format it to run the OS?

No need. Find a CFexpress to M.2 adaptor and plug the supported M.2 SSD in expansion slot in the back of the console.
In this way, you don't need to break the seal which may be considered warranty void in some countries.

Have you had any luck with this? I have read only bad reviews of it.
You can install a new SSD in the console and download the OS from this link.
To use the Offline System Update, you'll need:
Most USB flash drives come formatted as FAT32 and will have to be reformatted to NTFS. Note that formatting a USB flash drive for this procedure will erase all files on it. unless something has changed recently......... this will not work as the original internal SSD is married to the motherboard and the keys are in a hidden partition.
