In theory, it is possible to remove the stand. However, it does not seem to be designed with that intention in mind. However, if your goal was to mount the display then you are in luck as there are a couple different options.
Firstly, you can buy a Mac directly from apple with a built in VESA mount adapter.
The second option is if you already have an M1 Mac. You can actually buy an adapter that fastens onto the stand itself, and acts as an adapter for VESA mounts. Theirs a video that you can watch on it here.

Here's the adapter VESA Adapter for 24" M1 iMac
If you already own the system I go for the adapter.
Can I just get the Mac without any stand? I prefer, as strange as this sounds, to slide it into a back pack and prop it up with a mini easel I have. I then plug it in at Starbucks with a wireless mouse and keypad and I am go to go, no? So, can I do this get one without the stand or somehow remove it?

Sorry guy, Apple doesn't sell it that way and the only way to even get to the stand off is from the inside of the system which would be risky!
Best to just order the VESA version and use it that way without the stand piece.

@danj Dan, you say its a lot of work to remove the stand from the M1 iMac? I tried to but ran into a huge problem I cannot overcome yet. I contacted Apple Canada several times this afternoon and all I got was to ask the Genius department to install a VESA mount adaptor. I know there is a way to remove the stand because it was put there by technicians and engineers designed it.
Can you help me? The bolt has two flats on it on opposite sides. This tells me that it can be held on these flats without damaging the threads, and then unscrewed? The nut which goes on this bolt is used to adjust the tension on the swivel of the hinge. These flats allow you to remove this bolt but I will have to make a tool to allow me to do this. Also what about the other bolt? It seems to be a bolt with a cone shaped head and a threaded hole. It this to screw in a pulling bolt?
I forgot to tell you Dan, I plan on setting this monitor/iMac in a pair of desk top cellphone holders because this iMac sits on a kitchen counter and the cabinets above, with their light skirt, block 1/4 of the top of the screen. Thats why I have to remove this stand. I did this to the last iMac we have. I cut the stand in half and bolted it together in an overlapping fashion.

Sorry guy the hinge is a press-fit and is not designed to be taken apart.
Taking the hinge off requires entering from the inside to gain access to the mount plate removing the seven screws. But that's the end of the story! You need to remove the display without damaging it to gain access to the plate. Review this vid M1 iMac 24” Teardown - Full Disassembly
Even Apple here in the states won't do this, they will tell you to just buy the VESA version and sell your foot version.

It's a lot of work! And once off what are you planing on replacing it? So far Apple doesn't offer the stand alone only as part of the rear assembly.

@Vasily Ruzha - The adapter is what I would use. Getting a replacement case and the work needed is quite a lot and that would be the more expensive solution and all I can find is the foot version.

That's the exact question: how to remove the stand (around the hinge, without disassembling the case?) to have a chance to attach a VESA adapter? )
