Do you peal off the plastic?
Is that any Difference if i take the plastick of the displays backside or not?

You're supposed to take that transparent film off. It is for protecting the black thermal sheet during manufacturing and should be peeled off when you assemble the screen, otherwise thermal performance may be degraded.
Not that iPhone has decent thermal performance to begin with.
