ifixit guides are so great and so thorough, however, I see that there's no keyboard replacement video for the 17" 2011 models. Would there be another one on this site that would apply?

While it’s not the best, follow this guide to get the logic board out MacBook Pro 17" Unibody Logic Board austauschen then jump to Step 27 in this guide MacBook Pro (13 Zoll, Mitte 2010, Unibody) Tastatur Austausch
Take your time and if you are planning doing more of these or deal with a lot of screws get a micro-power driver to save your wrist's!
