I like to test the following:
- Touch response across the entire screen
- Look for dead pixels and good backlight
- Check all buttons
- Test all cameras, flash
- Test all microphones and different modes of recording
- Check all sensors (proximity, ambient light)
- Check all radios (WiFi, Bluetooth, LTE)
This only takes a few minutes and should be done before a repair and after. That way you know for certain what worked before.
