Have a GE GTW680BSJWS washing machine and during a laundry cycle it will randomly change the spin setting during each phase of the wash, often times ending with it not doing a final spin after it goes though the rinse ctcle

From your description it appears to be a problem with the operation of the control board's UI (user interface).
Seems like a button is operating when it shouldn't thereby changing what occurs during a program cycle. By locking the controls you prevent this from impacting on the program.
Here's the mini manual for the washer that may help.
Not sure if you used Consumer Error Mode (see p.2 bottom right) to check for any new error codes or whether it was the normal Consumer Help Indicator display message
Fault code 30 (stuck button fault) in the fault code description list might be relevant for your situation.
Performing Service Mode Test #18 (see p.2 bottom right) might help to find the problem, although I'm not sure about this.
Here's a video that shows how to access the control board in the washer. Check the recommendations per fault code 30 as to what to check and also check for any corrosion around the cables connected to the board as well.
If you suspect that the board is the problem, search online for WH22X35137 to find suppliers that suit you best.

What is the full model number of the washer?
Reason for asking is that there are 8 different variants i.e. GTW680BSJ0WS → GTW680BSJ7WS and the aren't all wired exactly the same way
This is just to ensure that if a part is faulty and needs to be replaced, that the correct one can be found.

It had some old error codes and I reset those... Ran another cycle and it would still do the same with switching the spin cycle randomly, and not show any new error codes. It seems I can stop it from doing so by hitting the two buttons on the controls to "lock controls" and it will make it through the cycle without an issue,
